Project Don't Starve Week 3: Shredded Buffalo Chicken

I love chicken. I love sweet potatoes. So when this recipe came through as shredded chicken ON sweet potatoes, Paige said “SIGN ME UP.” I am all for rice bowls and taco filling. But this recipe got me really excited because it was something different. Different flavors and a different food experience than I’m used to. Let’s get cookin’!

Week 3: Shredded Buffalo Chicken

Crock pot

Base Food:
Buffalo Chicken

Recipe (from CountryConvert)

  • 4-6 pounds of any chicken (breast or thighs)

  • 1 cup of water or chicken broth

  • 1/4 cup butter, melted

  • 1/4 cup hot sauce

  • 2 Tbs canned chipotle pepper adobo sauce

  • 2 Tbs lime juice

  • 2 Tbs mayonnaise

Add chicken and water or broth to crock pot. Cook on low for 8 hours or high for 4 hours. Remove from crock pot and shred. Save water for stock if desired.

Mix butter and hot sauce together and mix with chicken.

Combine chipotle pepper sauce, lime juice, and mayonnaise together. Drizzle over shredded chicken after serving.

4-6 pounds of chicken
2 sweet potatoes
1 Avocado
Hot sauce
Lime juice
1 can chipotle peppers
Veggie steamer packs
Wide egg noodles

What did we think?

Eh. Ok this one fell a bit flat for us. It wasn’t bad by any means. It was just a bit strange. I think if you are a person who enjoys these flavors and has some very good bases to start with, this could be a really great recipe for you. The chicken and sauce was easy enough.

We have a question we ask when we make a new food. Instead of asking “Is it good?” which can often times leave the cook feeling like he or she failed, we ask “Should we make it again?” Many of the meals we make aren’t bad. We just wouldn’t make them again. This fell in to that category.
